Take on some of our region’s most iconic ingredients. Throughout his illustrious career, Chef has made some incredible relationships with a whole range of food superstars; from fisher folk and game-keepers, to specialist growers, foragers and producers who all embrace natures natural harvest.
There isn’t much Paul doesn't know about wild food from around our shores - be that seafood, game, wild vegetables and fruits and of course the best our hedgerows can offer.
